It seems like lately when I go grocery shopping, my local Kroger has a hard time keeping the budget-friendliest plain whole milk Greek yogurt in stock. So, I finally decided to try an online Crockpot recipe, and the result was DELICIOUS! It was creamy, a little less chunky than the store-bought Greek yogurt, and not tart at all. Best of all, it was cheaper than a store-bought tub of yogurt.
1/2 Gallon of whole milk of your choice
1/2 cup of existing plain yogurt (once you make your first batch, save some of the batch to start the next batch)
Crockpot
Colander/Mesh Strainer
Cheesecloth
Heat the 1/2 gallon of milk in a Crockpot on LOW for 2.5 hours.
Turn off the Crockpot, and let it sit undisturbed for 3 more hours.
Stir in the yogurt starter (1/2 cup of existing yogurt). Wrap the Crockpot in towels to insulate it, and let it sit undisturbed for 8-10 hours (I did overnight).
Layer the cheesecloth over a colander or mesh strainer, and set this over a pot or large bowl. Pour the yogurt into the cheesecloth and strain in the fridge until desired chunkiness is achieved.
I let my yogurt sit in the towels overnight.
I strained my yogurt for 9.5 hours and got near-Greek-yogurt consistency.
The leftover yellow stuff in the pot after straining is acid whey. I am still deciding what to use this for.
